This elegant white dashi is made by combining a blend of domestically produced dried bonito, mackerel, and bonito flakes with dashi made from Hokkaido kelp. It's easy to use in clear soups, udon noodles, cooked rice, chawanmushi, and other dishes that take advantage of the colors of the ingredients.
